KETO CHICKEN CABBAGE CASSEROLE RECIPE

INGREDIENTS

  • 4 cups shredded green cabbage
  • salt & pepper
  • 2 cups cooked chicken shredded or diced
  • 3 large eggs
  • 1 cup cottage cheese
  • 1 cup cheddar cheese grated
  • 1/2 cup sour cream
  • 4 garlic cloves minced
  • 2 tablespoons fresh parsley, divided chopped
  • 1/2 cup parmesan cheese

INSTRUCTIONS

  1. Preheat oven to 375 degrees Fahrenheit.
  2. In a square casserole dish, place shredded cabbage. Lightly season with salt and pepper and spread evenly across the bottom of the dish. 
  3. Spread the shredded or diced chicken across the cabbage. 
  4. In a medium bowl, combine eggs, sour cream, cottage cheese, cheddar cheese, garlic, and most of the parsley (save some for garnish). Whisk to blend well. 
  5. Pour the egg and cheese mixture over the cabbage and chicken, spreading evenly across the pan. 
  6. Top with parmesan cheese and extra parsley. Bake uncovered for 35 minutes or until cooked through. 
  7. Remove from oven and allow the juices to settle. Serve hot.
